Girlfriend (29F) taking me (30M) on an emotional roller coaster, I need advice

Hello, I arrived at my girlfriend’s house to spend the night. He brought some food to cook for her and her roommates. She asked her roommates if they wanted to eat with us via WhatsApp. The message was read by both, neither responded. While obviously not the most low-key way to go about things, my girlfriend was pretty upset about it. Before going to sleep, she mentioned at length how she feels unsafe in her house since she doesn’t necessarily feel comfortable with her roommates. Understandable. Before going to sleep she asks me for validation “tell me something nice” “tell me something you like about me”. I proceed to do it. She then goes on to mention that she never offered him words of affirmation (not the first time). She then goes on to suggest that I can never fill that emotional void. Next, she mentions how her roommates make her feel insecure. I answer that she would love to help in any way possible to bring her closer to them, and also that not reading WhatsApp messages may not be as bad as it seems, since they may have been busy. She replies that “we shouldn’t talk about it.” She proceeds to blow a fuse and get mad at not wanting to continue the conversation. Mind you, I was pretty tired at 11:30 pm ready to get some sleep. We wake up, she tells me that she no longer wants to accompany me to the dinner that we had scheduled a few days ago this coming Wednesday. At lunchtime, she texts me to say I’m awesome and she apologizes for being rude in the morning. Should she get out of this mess? TL; DR my girlfriend is making me feel like a doormat, should I stay?
